TASTING NOTES

‘Eidos’ are the backyard garden arbors constituting the traditional Albariño vineyard. Selected grapes from vines over 50 years are destemmed, crushed and macerated under temperature control for maximum aromatic extraction. Natural yeasts are encouraged for a prolonged fermentation, the wine bottled beginning in April following the vintage after extended contact with the fine lees. Richly textured and exotically intense Albariños are the result, the salty sea breeze and granitic levels evident in a mouthwateringly mineral finish.

Eidos de Padriñán Albariño (2011) - "This light straw colored Albariño is impressive and will be a crowd pleaser. This wine opens with a mild Anjou pear bouquet with a hint of pilsner beer. On the palate, this wine is medium bodied and very nicely balanced between it fruit and gentle acidity. The flavor profile is a very tasty ripe Anjou pear with nicely integrated gentle acidity. I also detected hints of green apple and a dash of white pepper. The finish is dry and very refreshing. This Very Good Albariño would pair perfectly with grilled swordfish skewers. Enjoy."

Eidos de Padriñán Albariño (2011) - "This is a classy Albariño with lemon, melon and minerally aromas that come across pure. The mouth is round and elegant, with layers of texture. Pure lemon and apple flavors have sweetness as well as cut, and the finish is powerful and offers a touch of green-herb flavor. Drink this complete wine right away."

Eidos de Padriñán Albariño (2011) - "Light yellow.  Aromas and flavors of ripe citrus fruits, jasmine and green tea, with a bright mineral overtone.  Juicy and expansive, with very good closing punch and lingering floral and mineral notes.  This wine has the cut to work with lighter foods but also has the substance to handle richer dishes."

Eidos de Padriñán Albariño (2010) - "This pale yellow colored Albariño opens with a very shy wet stone and peach bouquet. On the palate, the wine is light bodied, slightly acidic and crisp. The flavor profile is mineral infused mild green apple with notes of white pepper and a hint of green apple. The finish is dry and lingers slightly. I suggest pairing this Albariño with grilled trout smothered in butter. Enjoy."

On the palate, this wine is medium bodied, balanced, and crisp. It displays forward mineral flavors with hints of citrus. The finish is dry and its mineral notes linger. Fleshier and deeper in pitch than the Veigas, with palate-coating orchard fruit and floral flavors. Finishes with an echo of pear and a salty mineral quality, with very good cling. I prefer the vivacity of the Veigas by a hair."

It has a distinctive, rosy red fruit character, hinting at persimmon, broadening to toasted almond and honey. The finish opens out and lasts. ADEGA EIDOS WINERY INFO

Overview: Founded in 2000, a modern green facility completed in 2003. Located in Padriñán parish overlooking Sanxenxo harbor on the southern edge of the Val do Salnés subdistrict at the westernmost, maritime extreme of Rías Baixas. Twenty acres of old and often ungrafted Albariño vines among 100 separate parcels located amongst the gardens of Sanxenxo enjoy a southerly exposure protected from the north winds. ‘Eidos’ are the backyard garden arbors constituting the traditional Albariño vineyard. Selected grapes from vines over 50 years are destemmed, crushed and macerated under temperature control for maximum aromatic extraction. Natural yeasts are encouraged for a prolonged fermentation, the wine bottled beginning in April following the vintage after extended contact with the fine lees. History: Founded in 2000 by Manuel Villalustre and Marcelo Radío, Adega Eidos produces Albariño from grapes grown exclusively in and among the gardens of Sanxenxo in the parish of Padriñán, at the southern extreme of Rías Baixas' Val do Salnés.

Padriñán encompasses a unique south-facing slope overlooking the sea, its perfect exposure enhanced by reflection from the water and a wind-sheltering stand of eucalyptus at the top of the slope. The "Eidos" (garden arbors) in Sanxenxo are traditionally trained and more often than not ungrafted and over 50 years of age. One hundred such parcels totaling 20 acres are owned or controlled by Adega Eidos.

Since 2003, winemaking has taken place in a winemaking facility of efficient and modern design overlooking Sanxenxo harbor. Selected bunches are brought the short distance in small crates, then subjected to further sorting before destemming, crushing and cold maceration. Natural yeasts are encouraged under temperature control to achieve long fermentations and natural clarification, the wines left on their fine lees until bottling. The primary wine, Eidos de Padriñán,offers ripe and extracted Albariño fruit with clear salty/mineral notes from the sea breeze and granitic soil.

An isolated fermentation facility within the winery is used for micro-vinification of the ancient ungrafted parcels and subsequent assemblage of Veigas de Padriñán — a paragon of the category, bottled following nine to eleven months on the fine lees.

Current total production of 5,000 cases is planned to increase to approximately 15,000 cases by 2013.
