OVERVIEW

Estate founded in 1975 by Manuel Sancho, noted Spanish recording empresario, upon purchase of a 19th-century convent in the heart of the Penedès region. 100 acres of estate vineyards planted to local varieties plus Cabernet, Merlot and Chardonnay form the basis for an important production of both Cava and table wines.

HISTORY

Manuel Sancho's 230-acre estate, "Finca Manlleu," is located on a prominent chalky knoll five miles south of Vilafranca del Penedès overlooking the hamlet of Sant Marçal. One hundred acres are planted to Parellada, Xarel-lo, Macabeo and Chardonnay for white wines; Tempranillo, Cabernet Sauvignon and Merlot for reds. The "Mont" provides 360-degree exposure, creating a wide variety of microclimates for maturation of the various varieties.

In 1975, Manuel Sancho purchased a neglected 19th-century convent, originally a 14th-century farmhouse, converting it to a state-of-the-art winemaking facility and initiating the restructuring of the vineyards. Recent excavation has expanded the CAVA aging and bottling capacity, at the same time revealing medieval underground passageways in the chalk which have been carefully preserved for additional bottle storage.

Intrinsic vineyard quality and careful handling of the grapes obtain a naturally-rich base wine in little need of dosage. Mont-Marçal Brut Reserva is produced from the indigenous white grapes, Parellada, Macabeo, Chardonnay and Xarel-lo, aged at least 24 months with the yeast, and disgorged on order for shipment.

PRESS

Mont Marçal Cava Brut Rosado (2011) - "A meaty rosé for charcuterie, this wine will brighten chorizo with its scents of cranberry, Red Delicious apple and rose. It balances the pleasant bitterness of lees with the sweetness of the fruit in a mouthwatering finish."

Mont-Marçal Aureum Brut Nature - "This vintage no-dosage Cava is naturally smoky smelling and crisp as a whistle, with apple aromas. It feels entirely fresh and full of energy, with lemon, underripe pineapple and apple flavors. The finish is pure, and as you’d expect from a top-notch brut nature, minerally and elegant."

Mont Marçal Cava Brut Extremarium - "This Cava from Spain is light yellow colored and its slow rising tiny bubbles fill the glass. It opens with a fragrant bread dough and red apple bouquet hints of wet stone. On the palate, this wine is light bodied, acidic and crisp. The flavor profile is a mineral infused apple with notes of almond, tonic water and lemon verbena. The finish is dry and its flavors linger nicely after the wine is gone. This sparkler is one of the best Cava's that I have covered from Mont Marcal. Serve it with mini-quiche Lorraine appetizers. Enjoy."

Mont Marçal Cava Brut Rosado (2009) - "This gets going with clean, light cherry and berry aromas that bring a citrus note to the fore. It feels crisp, dry and pure, with citrus, plum and dust flavors. An elegant rosé made from the Trepat grape, it finishes dry and spicy, with ample leftover fruit."

Mont Marçal Cava Brut Extremarium - "Full disclosure requires that I acknowledge that I’m not a big fan of Cava, and that I have spent my own money to buy it exactly once during the past twenty years (for a Spanish-themed wedding party that happened to be my own).  With that said, however, my credibility in praising this wine should be pretty damned solid.  This is a stop-you-in-your-tracks Cava, and that’s exactly what it did to me.  Whereas most cava is rather rustic, with a wet straw character that is less endearing on the third sniff-and-sip than it is on the first, this wine is clean and fresh and engaging in both aroma and flavor.  And in texture too:  Even prestige-level cavas can be notably coarse in effervescence by comparison to fine Champagnes, but this wine has a marvelously creamy feel.  That really enhances the soft, generous aromas and flavors of the wine, which show a gorgeous lemon chiffon character as well as a baked apple backnote.  It is absolutely gorgeous from stem to stern, and can soften even the hardest core cava skeptic.  I should know, right?"

Mont Marçal Cava Brut Reserva (2007) - "Green apple, peach and melon aromas are common but perfectly clean and inviting. The palate is refined and hints at elegance as it delivers very good lime, gooseberry and fresh celery flavors. Long and dry on the finish, with lip-smacking acidity."

Mont-Marçal Aureum Brut Nature - "(50% Xarel-lo, 30% Chardonnay and 10% each of Parellada and Pinot noir; aged for two years on its lees): Bright yellow. Fresh citrus and orchard fruit aromas are complicated by notes of buttered toast, anise, minerals and jasmine. Bright and focused but deep, offering powerful orange and pear flavors that pick up weight and smokiness with air. Closes on a spicy note, with excellent clarity and lingering florality. Part of the Chardonnay was barrel-fermented but I didn't detect any oakiness."

Mont Marçal Cava Brut Reserva (2007) - "Light gold.  Heady aromas of dried pear, peach pit and orange, with a spicy overlay.  Juicy and penetrating, offering firm citrus zest and orchard fruit flavors and a touch of bitter herbs. This refreshingly dry, grown-up Cava finishes with good cut and precision.  Enjoy it on its own or with lighter foods, even sushi."

Mont Marçal Cava Brut Rosado (2008) - "(100% trepat):  Dark pink.  Raspberry and cherry on the fruit-driven nose and palate.  A juicy, pliant midweight that picks up notes of bitter herbs and licorice with air.  Shows a bit of heat on the back end but there's also good precision and finishing bite."

Mont Marçal Cava Brut Rosado - "This vintage-dated wine had the elegance of Champagne, with exceptional focus and precision. Fruit flavors of cherry and pomegranate contributed to a sleek, racy, polished wine perfectly suited to the appetizers."

Mont Marçal Cava Brut Rosado (2008) - "A subtle wine made entirely from Trepat. Aromas of strawberry and toast are mixed well, while the palate is juicy, crisp and correct, with raspberry and plum flavors along with a dose of dry spice. Light, toasty and perfectly dry on the back end. "

Mont Marçal Aureum Brut Nature - "The Non-Vintage Aureum Brut Nature Reserva contains 30% Chardonnay of which one-third was barrel-fermented and 10% Pinot Noir that spent 30 months on its lees. Tiny bubbles, a frothy mousse, and dry (zero dosage) savory flavors lead to a mouth-filling, tasty Cava with an impressively long, refined finish. Unlike most Cavas, it may well evolve for 1-2 years and drink well for 5-6.
Mont Marcal’s new releases offer both quality and value."

Mont Marçal Cava Brut Extremarium - "The Non-Vintage Brut Extremarium is actually a product of the 2006 vintage. It is made up of Xarel-lo, Parellada, and barrel-fermented Chardonnay. It offers up a sophisticated, Champagne-like mousse leading to a substantial, concentrated, dry, and well balanced sparkling wine that should last for several years."

Mont Marçal Cava Brut Reserva (2006) - "Bright straw with a fine bead. Stony lime and lemongrass aromas are complemented by a hint of anise. Very dry and a bit austere, offering tangy citrus flavors and strong mineral cut. The finish repeats the lemongrass note and leaves salty mineral and white pepper notes behind. I like this wine's linear personality; it should be very flexible at the table."

Mont Marçal Cava Brut Extremarium - "Pale gold with a fine bead. Pungent aromas of musky pear, yellow plum, anise and lemon thyme. Pliant orchard fruit and melon flavors are given a refreshingly bitter edge by peach pit and quinine. Really stains the palate, finishing with excellent breadth, cut and grip. This actually seems young: I'd give it a year or so of bottle age. "

Mont Marçal Cava Brut Rosado (2005) - "Light pink. Nervy red currant and blood orange aromas are complicated by honeysuckle and dried rose, with a sexy underpinning of dusty minerals. Juicy red berry flavors are brightened by citrus pith and gain flesh with air. Bitter cherry and raspberry flavors linger on a long, seamless finish. This would kick plenty of pink Champagne around the block-at a fraction of the price."

Mont Marçal Cava Brut Reserva (2005) - "Bright yellow. Seductively perfumed aromas of Anjou pear, yellow apple and smoky minerals. Pliant orchard and pit fruit flavors boast very good concentration and are energized by dusty minerals, which add good back-end snap. The smoky note repeats on the long, sappy finish. This delivers serious bang for the buck."
